It always makes Carolyne and I laugh when people look at us and say, "You girls are too skinny to own a cupcake shop!" - Jodi Willoughby

Cara Fullerton mentioned in her 2006 client profile that her post-fitness competition treat would be a Crave coconut cupcake. I made a mental note. A short while later I attended a social function. What should greet me but an assortment of the most delightful cupcakes I had ever tasted. Crave cupcakes-again.

A girlfriend and I made the trek to Crave on 17th Avenue. The lineups should have been a clue. Like Cara Fullerton, both my girlfriend and I are Jamaican. We know our coconut. A bite into our cupcakes made us pause. In that bite, was a homemade slice of heaven. We were hooked. Then, by some strange twist of fate, Carolyne Mcintyre Jackson came to One On One Fitnessfor a consultation with me. When she told me that she owned Crave, I dropped to my knees in worship. Sister and Crave co-owner Jodi Willoughby was next to follow. I am delighted to share their journey with you.

Why did you both start exercising?

Carolyne: During my pregnancy in 2006, I stopped running and started going to the gym three times per week. I was the only pregnant girl in the gym doing lunges. I decided to go to a couple of exercise "boot camps" to help get me back into shape. The boot camps were great for improving my overall fitness level. After sixteen weeks of boot camps, five days a week, I was not seeing the kind of results that I wanted. I wanted a lean muscular body and the boot camps were just not doing it for me. I started doing some investigation into finding a personal trainer and nutritionist.

Jodi: Four months after the birth of my first child, my sister signed me up for a series of outside workouts. I was never a person that did any kind of physical fitness and this was brand new for me. I lost my baby weight and started to enjoy working out. I even started running. After my first child turned one, I was pregnant again and the last physical exercise I did was the Mother's Day ten-kilometre run. For about one year I did nothing that would have constituted a workout. Always supportive, my sister Carolyne signed me up for a series of outside workouts. I did this for four months and saw no change. I did not feel better, and I was still carrying baby weight! It was time to get serious

Why did you come to One On One Fitness?

Carolyne: When I started the research on personal trainers, I found that very few offered a nutrition option to go along with the exercise instruction. Also, lots of the personal trainers would come to your house or office but did not have their own gym. That was not for me. I also did not want to work out in a great big gym with tons of other people and rotating trainers. I wanted a little gym where I could work out with a trainer and get some advice on nutrition. I met with Sandra Bueckert at One On One and asked her, "Do you do any fad dieting such as all protein and no carbs?" Her response was, "No, we eat real food here-it's all about balance." I run a business, have a baby and a husband. I wanted to make sure I could maintain it. I was convinced and signed up to come in twice per week for six months.

Jodi: Carolyne met with Sandra and signed up at One On One Fitness first. I was very hesitant. I really wanted to stop saying to people that I was still carrying the baby weight (at this point, my second child was ten months old). Sandra made me feel really comfortable, and I knew that this was something that I would be okay with, even though I was so nervous. I liked the idea that it was a smaller gym that had a nutritional component.

What were the most challenging aspects of starting a program for each of you?

Carolyne: The hardest thing for me is the food. I really have to make a conscious effort to eat well. Instead of eating something bad I would make the decision not to eat, which is even worse. I'm still not great at the eating part, but I am getting better!

Jodi: I was intimidated about lifting weights and knew that I was out of shape with regard to my cardiovascular fitness. Being a healthy eater was also a struggle because neither my husband nor I cook. We would often have cereal for supper. I was a better provider of food for my children than for my husband Chris and myself.

What has been the most rewarding aspect of this whole process for you?


Carolyne: There are two things that have been the most rewarding. One was that I always thought my dream clothing size would be a size eight. I always believed that I would never be able to get below a size ten. I achieved this goal and now I'm working on getting to a size six. The second reward was that we took a month off in January and went to Hawaii with our families. We did not gain a pound! We have some friends who are always doing the fad diets. They go away for two weeks and gain ten pounds. For us, this was a real clincher. I knew what we were doing was really working!

Jodi: When we were in Maui, we ran or walked every other day and twice per week did a workout that our trainer Tad created for us. We did not have to pack special food or cut anything out of our diets. Some of our friends find it really inconvenient to do anything out of the norm because their diets are so regimented. I have had lots of my friends comment on my weight loss. The first question is what diet are you doing? I tell them "no diet." I am eating normal food and exercising. My size has gone from a fourteen to a solid ten. I have never been a ten. Even after we started at One On One Fitness, I believed that I would always wear a size large. My last few shopping excursions have been for medium-size shirts. This is big for me. I am able to go running with my husband and my sisters and I can do real push-ups and cook a decent meal now. I have learned that I am capable and that I can push myself. I was always one to say, "I can not do it." Both my trainers Tad and Doug push me to my maximum, and even though I am truly dying inside, I feel so good and proud after I am done. Being physically fit makes me a happier person.

What you have learned about fitness?

Carolyne: I have learned that weight training along with cardio and nutrition really is the key to success in weight loss. I have never been smaller than a size ten, and the thought of getting to a size eight was simply a dream. However, with everything combined I am starting to see a figure I like.

Jodi: The thing I like best about eating healthy is that there is nothing faddy about it. I have friends who have done a number of different diets, and the weight always returns. We eat real food in our house like carbohydrates. I still eat toast with my eggs; I have crackers with my tuna. I can marinate my chicken and use butter on my potatoes! I eat potatoes. It has all been about moderation and choosing wisely. I still eat cupcakes.

How do you manage to stay motivated?

Carolyne: I am enjoying seeing the results and the fact that I have gone down a whole jean size (which I thought I would never be able to do). Also, after just completing my last marathon, I had the strongest finish ever. For the first time, I am looking forward to completing the next one instead of taking a month off of running and starting again!

Jodi: I stay motivated because I feel strong and healthy. We both have young children and a business to run. We schedule our workouts at the same time on the same day every week. We look at it as a meeting that we always have. I have gone down two jean sizes and want to go down one more. My biggest motivator is how good I feel on the inside and out. It always makes Carolyne and I laugh when people look at us and say, "You girls are too skinny to own a cupcake shop!"

What are your fitness goals at this stage?

Carolyne: My goal is to complete the Chicago Marathon in October and get down to a size six. My long-term goal is to qualify for the Boston Marathon. Jodi's goal is to continue eating healthy, drop another jean size and run a twenty-two-kilometre run in September with her sisters.

How often do you work out?

Carolyne: I am currently doing three times per week at One On One and running three to four times per week on my own. I do shorter interval runs during the week and do long slow runs on the weekends (up to three hours) to train for the marathons.

Jodi: I work out twice per week with my trainer and try to run two times a week. I have really enjoyed working with Sandra, Doug, and Tad. They are a great team and have been so supportive to me yet at the same time pushing me to my maximum potential one step at a time, be it through weight training, nutrition, or cardio. I have learned so much. I always tell people that if I can change my life to adopt exercise and diet into my day-to-day living, anyone can! And I get to work out with my sister. We have always played together and for the last couple years worked together building Crave. Now, we are working out together. I really owe a lot of my love for exercise to my sister. Without her influence in my life, I would have never had the courage to do the kinds of things I am doing now. She is truly my inspiration
